Guys- I am so guilty of pinning and pinning, and doing nothing with it. I bet half of you are laughing in agreement. I tend to pin endless recipes promising myself I'll make it, "here's to starting the week off to a fresh start with our meals", just to quickly fall back to the same old same old or that box of Annie's in the pantry. Whose with me? Note to self, pin it, make it. I'll report back later on my progress with this one.


Anywho-


Last week I shared a simple dish I found last minute and said I'd pass the recipe on to you! Yesss, I realize cookout season may not be happening this year, but it's an easy peasy side for an at home sunshine feast, or craving.


So enjoy my fellow Rachel Ray's. Oh and here's to doing what we pin, cheers.


Italian Pasta Salad


  • Salami or sausage cut into chunks

  • Cherry tomatoes sliced in half

  • Black olives (pearls sliced to go)

  • Fat free feta cheese

  • Fresh mozzarella (I used the balls)

  • Red onion (I used 1/2)

  • Fresh parsley

  • Rontini pasta (1 box)

  • Italian dressing (your choice!)

  • Italian seasoning


Notice I didn't specify amounts of pretty much any of it, this is because I wing it and things taste much better (eye ball it, you're good girl). Cook pasta according to its directions and let cool (throw in a tiny bit of olive oil to prevent sticking). Once cool, mix in additional chopped ingredients and dressing.


Ta daaa, it's that easy, like that's it. But so flavorful. The leftovers were perfect for my hubby's lunches too. As for me, as much as I wanted to continue splurging on cold pasta, spinach salad is on my menu because this new quarantine living hasn't been the prettiest. As I try new recipes, or dig out old ones I saved a year + ago, I'll be sure to share the goodness!
